Coconut Rice

Coconut Rice (feeds 2-4 people)

What You'll Need: 

1 Cup Jasmine Rice

1 3/4 Cups Coconut Milk

1/4 Water

1 Tbsp Grapeseed Oil

1 Tbsp Kosher Salt

1/4 Cup Black Sesame Seeds (Toasted)

1/4 Cup Cilantro (Chopped)

Juice from 1 large lime

1/4 Green Onions (Chopped

 

 

1. Begin by mixing in the jasmine rice with the tbsp of oil into a medium sized pot over medium. I like to do this before adding the liquid so it cooks the rice without having any bit of rice get stuck to the pot.

2.  Add the Coconut Milk, Salt & Water and stir a little bit. Bring to a boil. Cover the pot and bring the stove down to low-simmer and let cook for 20 minutes. Once time is up , let sit with cover on for 15 minutes. 

3. Finally mix the rice, cilantro, black sesame, lime juice, and green onions all together in a large bowl. Salt to taste.
